Umberto Romano's sauce alla norma tells the flavors and smells of an ancient recipe of Sicilian origin, precisely of Catania origin. There are several stories about the origin of this sauce. It is said that his name "Norma" is an explicit reference to the homonymous work by Vincenzo Bellini. Our Norma sauce is made with tomatoes and aubergines from the Ragusa area and during preparation they are fried at the moment and without any pre-cooking. To complete the original recipe, we recommend a generous sprinkling of salted ricotta or grated cheese when serving.

Ingredients: tomato puree, aubergines 40%, sunflower oil, sugar, extra virgin olive oil, onion, salt, basil, garlic.

Personalmente lo usé como condimento para la pasta, también compré la pasta aquí en sifoodly, son muy buenos spaghetti largos, un sabor mucho más sabroso que los productos industriales llenos de conservantes comprados en el supermercado.

The story of his birth is also really interesting.
Everything happened almost by chance, as with most of the best works. Tradition has it that after the premiere at Bellini's Catania theatre, Norma, the maestro and the artists were unexpected guests of a chef from Catania. Not being prepared for dinner, the chef decided to improvise, thus giving life to one of the most famous dishes of the Sicilian tradition.
