Boulettes de sardines - Recette sicilienne

For the meatballs:
1 kg of sardines
1 egg
1 tablespoon Raisins
1 tbsp Pine Nuts
100 g grated Caciocavallo
80 g breadcrumbs
1 clove Garlic
to taste Minced mint
to taste salt and pepper
to taste Extra virgin olive oil
q.b. Farina 00
For the gravy:
750ml tomato puree
1 clove Garlic
q.b. Sale
to taste Extra virgin olive oil
to taste Mint

🧑‍🍳 Preparation:
Clean the sardines, remove the head, bone and dorsal fin.
Eviscerate them and try to remove most of the "thorns" by rinsing them under cold water.
Put the drained sardines in a bowl and add the rest of the ingredients, except the flour and oil.
Knead with your hands and mix everything, so as to break up the sardines as well.
Sauté the minced or whole garlic if you prefer to eliminate it, then prepare the tomato sauce, adding a little minced mint.
Heat the oil in a pan.
Then form the meatballs and seal them gradually with the flour.
At this point you can choose whether to make fried sardine balls or with sauce.
If you decide for the version with sauce you will only have to lightly fry the sardine meatballs, just the time it takes to weld the meatball which will have to form a light crust.
Bring the sauce to a boil, then add the meatballs and continue cooking for about a quarter of an hour.
