Busiate con pesto, mozzarella e pomodorini - Ricetta Siciliana

Busiate with pesto, mozzarella and cherry tomatoes

🙋🏽Doses: 2 people


200 gr Busiate
2 heaping tablespoons basil pesto
8 datterino or pachino cherry tomatoes
10 small mozzarella balls
2 tablespoons extra virgin olive oil

Cut the cherry tomatoes into pieces and the mozzarellas in half and place them in a bowl with 2 tablespoons of oil and a little salt and mix.
Meanwhile, cook the pasta in abundant salted water and dilute 2 tablespoons of pesto in a container with a little of the pasta cooking water.
When the pasta is al dente, drain it, stir it over the heat for a few minutes with the pesto and add part of the tomato and mozzarella sauce.
Before serving, add the rest of the dressing.
Served at the delicious wholemeal Busiate pesto mozzarella and cherry tomatoes very good even cold!
