Honey Cake - Sicilian Recipe

250 g of orange honey
65 g of butter
200 g of 00 flour
100 g of plain yoghurt
15 g baking powder
180 g of eggs
50 g potato starch
1 orange zest
Powdered sugar to taste

Lightly heat the honey in a saucepan, then remove it from the heat and add the butter and yoghurt.
Separately separate the yolks from the whites, adding the former to the honey. Mix until a homogeneous mixture is obtained, to be transferred to a bowl.
Separately, sift the flour, baking powder, cinnamon and potato starch, and add them to the honey mixture, mixing and then adding the grated orange zest.

Whip the egg whites until stiff and add them to the mixture; meanwhile, butter and flour a baking mold and fill it with the dough. Put in the oven and cook at 200° for 40 minutes.
Dust with powdered sugar after the cake has cooled.
