Baskets with pistachio cream

🍅 Ingredients and preparation of shortbread pasta

225 g weak flour W 160 suitable for biscuits or tarts
 g butter
100 g sugar icing
50 g eggs (about 1 egg)
1 vanilla pod
1 pinch of salt

As soon as you take the butter out of the fridge, cut it into chunks and leave it at room temperature for about twenty minutes. In the bowl of the stand mixer, cream the butter with the icing sugar.
Work the mixture until you get a smooth cream. Add the pulp of the vanilla pod, the salt and work the mixture.
In a separate bowl, beat the egg and then incorporate it into the butter and sugar mixture, stirring constantly and using a spatula.
Sift the flour and add it gently to the mixture.
Activate the planetary mixer and work the mixture just the time it will take for the flour to be absorbed.
Wrap it in plastic wrap, then let it rest in the fridge for 1 hour.
After the time, roll out your pastry with a rolling pin until it reaches a thickness of half a centimetre. With wavy-edged stencils, make your shortcrust pastry baskets.
Now line the molds with the shortcrust pastry, prick the bottom of each basket with a fork. Bake in a static oven at 180° C for 20 minutes, then let them cool.


🍅Ingredients and preparation pistachio cream

100 g pistachio cream
250 gr mascarpone
50 ml sweetened whipping cream

In a bowl, whip the cream until stiff and set aside. In another bowl, use an electric mixer or a stand mixer to mix the pistachio cream with the mascarpone until everything is well blended.
Mix the pistachio and mascarpone cream with the whipped cream and mix everything from the bottom up until you get a smooth cream.
At this point your pistachio cream is ready to fill your baskets, you can help yourself with a teaspoon or a pastry bag.
