Sicilian biscuits with almonds Nzuddi

🍅 Ingredients:
500 g of 00 flour
400 g of sugar
100 g of toasted almonds
2 spoons of honey
1 egg white
Zest of a candied orange
5 g of ammonia for sweets
Cinnamon powder to taste
Water to taste

🧑‍🍳 Preparation:
In a bowl, mix together the flour, sugar, finely chopped almonds, chopped candied orange peel, ammonia and cinnamon.
Then add the beaten egg white and the two tablespoons of honey and begin to mix everything with water to add slowly until you obtain a homogeneous mixture with a fairly firm but slightly sticky consistency.
Remove the chunks from the dough and shape them on a pastry board sprinkled with two parts sugar and one part flour, giving them a more or less very large circular shape and about 1 cm thick.
Transfer the 'nzuddi onto a baking sheet lined with parchment paper and place a whole almond in the center of each 'nzuddo.
Place everything in a preheated fan oven at 200 °C and cook until the 'nzuddi have taken on a golden colour, then continue cooking at 100 °C for a maximum of ten minutes so that the biscuits dry well inside too .
