Cantucci biscuits - Sicilian recipe

250 g of flour
125 g of sugar
125 g of almonds
2 eggs
1 yolk
50 g of butter
1 pinch of salt
2 g of baking powder

🧑‍🍳 Preparation:
Arrange the almonds on a baking tray and toast them for a few minutes.
Melt the butter in the microwave or in a saucepan over very low heat, and then let it cool down.
Break the eggs into a bowl, add the granulated sugar and a pinch of salt, and mix everything with an electric mixer.
At this point add the melted butter, the flour – better if sifted – and the baking powder, if you want the vanilla powder is fine too.
Incorporate the toasted almonds, which you have allowed to cool, into the dough and then form loaves of the size that suits you best, depending on the size you want to obtain.
Brush the loaves with the beaten egg yolk, and then bake them at 190°C for about twenty minutes.
As soon as the loaves are taken out of the oven, cut them with a knife in their classic diagonal slice shape, and then place them in the oven for another ten minutes, this time lowering the oven temperature, setting it to 170°C.
