Honey biscuits - Sicilian recipe

🍅 Ingredients:
450 gr
 flour 00
300 g of honey
130 gr
1 heaped teaspoon of baking powder
almonds qb
honey q.bb

🧑‍🍳 Preparation:
Pour the honey and sugar into a saucepan and melt over a very low heat, tRemove from the fire and let it cool down.
Sift the flour, add it to the sugar-honey syrup and work the mixture with a spoon until the flour has been incorporated.
Turn the dough out onto a pastry board and continue working with your hands. Knead until you get a smooth and homogeneous mixture.
Wrap the mass in cling film and leave it to rest in the fridge for about 1 hour.
Once the time has elapsed, take the mass out of the fridge and, with your hands greased with oil, make sticks about 1 cm thick, forming biscuits in the shape you like best.
Typical is the "branch" shape which is made by cutting sticks of about 5 cm which you will sharpen at the tip and join all together at the opposite end. Score the branches with a knife to simulate bark.
Garnish with an almond and cook them in a pan with parchment paper at 200° for about 15 minutes.
Leave to cool slightly then brush them with honey.
These are very hard biscuits that keep for a long time.
As the days go by, they lose some of their hardness.
The best way to eat them is to soak them in a fortified wine such as Passito or Marsala.
