Palermitan rolls - Sicilian recipe

6 thin slices of veal
1 onion
2 garlic cloves
20 g of pine nuts
20 g of raisins
100 g of crumb
And bunch of parsley
3 tablespoons of grated caciocavallo
Q. b. of breadcrumbs
Q.b. of extra virgin olive oil, salt and pepper
Some Bay leaves

Pour extra virgin olive oil into a large pan and sauté the finely sliced onion and garlic. Add pine nuts and raisins.
Remove the garlic, if not desired, and pour the crumb. Toast and season with salt and pepper.
Chop the bunch of parsley and, in a bowl, pour it together with the sautéed vegetables to which you will add the grated cheese, mixing everything well. The filling is ready.
On a cutting board, spread each slice of meat lengthwise with a pinch of salt and place a generous spoonful of filling on them
Roll up the slice taking care to close the side edges to hold the filling.
Now pass each roll in the oil and then in the breadcrumbs.
When they are all ready, collect the rolls in number of three, skewer them with wooden skewers alternating them with bay leaves and onion.
They are ready to cook them. Place them on a baking tray, pour a drizzle of oil over them and bake for 15/20 minutes at 200 degrees.
If you want to cook them on the hob, you can grill them on a plate or, alternatively, cook them in a simple sauce, closing them one by one with a toothpick.
