Citrus Stuffed Calamari - Sicilian recipe

🍅Ingredients:

🧑‍🍳 Preparation:
Clean the squid and cut the tentacles into small pieces.

Break up the almonds with a mixer or by placing them in a bag and crushing them with a meat mallet.

Chop 2 small cloves of garlic and a sprig of parsley, collect them in a pan with the chopped tentacles, 25 g of oil, a pinch of salt, a grind of pepper and cook for 5 minutes.

Chop the slices of bread and mix them in a bowl with the chopped almonds, the breadcrumbs, the cooked tentacles, 2 tablespoons of desalted capers, the juice of 1 and a half oranges, the grated lemon rind, a pinch of salt and a grind of pepper.

Stuff the squids with this stuffing, distributing it carefully in the bags; close them with a toothpick and place them on a baking tray lined with baking paper.

Season them with oil, salt and pepper and bake at 180 °C, in ventilated mode, for about 10 minutes; take them out of the oven, sprinkle them with their cooking liquid and cook in the oven for another 5-10 minutes.

Peel the remaining oranges, cut them into slices, dress them with a drizzle of oil, a pinch of salt and a few leaves of marjoram. Serve the calamari with the orange salad.
