Penne with red pesto - Sicilian recipe

350 gr penne
100 gr sheep ricotta 
50 g Grana Padano DOP (grated) 
50 gr Speck
10 dried tomatoes in oil
50 gr black olives (pitted)
Some leaf basil
4 spoons extra virgin olive oil

🧑‍🍳 Preparation:
Cut the speck into cubes and brown it in a pan with a little oil.
Slice the olives. In the meantime, combine the roughly chopped dried tomatoes, the basil, the cheese, the ricotta and a little salt in the bowl of the food processor or hand blender; blend until everything is reduced to a grainy cream.
Cook the pasta in plenty of boiling salted water, drain it al dente, keeping half a glass of cooking water aside.
Sauté the pasta in the pan with the speck, combining the cream of sun-dried tomatoes and a few tablespoons of the cooking water, add the black olives and stir to flavor the pasta well, then serve.
