Busiate with salmon - Sicilian Recipe

500 gr in Busiate
600 g of fresh salmon
1/2 glass of prosecco
200 ml of almond cream
1 tablespoon of tomato paste

Thoroughly wash the salmon, checking that there are no bones and cut it into cubes
In a saucepan put some extra virgin olive oil and the chopped shallots and parsley.
Simmer, add the salmon, salt, pepper and let it infuse, after a few minutes add the prosecco and let it evaporate.
Now you can add the tomato paste, which will be better dissolved in a drop of warm water, now let it cook for a few minutes, the salmon doesn't need that much time.
When the sauce has thickened, add the cream.
Once the pasta is cooked, sauté it with this wonderful sauce and you're done.
