Panelle Siciliane - Sicilian recipe

300 gr of chickpea flour
900 g of water
1 tablespoon finely chopped fresh parsley
1 teaspoon of salt

Pour the chickpea flour into a saucepan, add the salt, mix and finally add the water little by little and mix it with a hand whisk until you obtain a lump-free mixture.
Then thicken over moderate heat, stirring constantly with a hand whisk for a few minutes, the time necessary for a sort of polenta to form which detaches from the sides of the pot.
The compound must be compact and not liquid! finally add the finely chopped parsley:
Stir well and transfer the mixture to a cutting board lined with parchment paper.
Roll out with a knife to a thickness of 5 mm.
Shape the edges so you don't waste dough and let it cool completely before cutting your squares! use a square, rectangular cookie cutter, circles are also fine or simply a knife from which to obtain irregular pieces!
As you make them, set them aside. You can also knead the rest of the dough again, spread it between two sheets and make other squares!
You can cook them in a very hot 200° static oven on baking paper for about 15 minutes, then activate the grill for the last few minutes or fry in plenty of oil in a large pan for about 2 minutes without turning and finally drain on absorbent paper, sprinkle with salt and if you prefer with a few drops of lemon!
Like any fried food, I suggest you eat them in a short time, hot or within a few hours, alone or served in tasty sandwiches.
