La Segreta takes its name from the wood that surrounds our vineyard at Ulmo. This young and fresh wine obtained mainly from Nero d'Avola grapes, the flag of wine Sicily, gains personality and style with the addition of international grapes. All the grapes are expertly grown in the vineyards owned by Planeta. La Segreta is a versatile companion for daily drinking, suitable for the most diverse occasions. It is a perfect approach to Sicilian wine with its right balance between quality and price, guaranteed by the patient work of the Planeta family, from the vine to the bottle.

TYPE OF SOIL: medium deep tending to clayey, scarce almost absent skeleton, medium calcareous; in Maroccoli, calcareous soil rich in medium-sized skeletons, not very clayey with an abundant silty fraction. A Gurra, medium deep, not very calcareous, absent skeleton and very clayey; Buonivini, soils composed of calcareous marl, abundant and small-sized skeleton; fine texture with light colored clay fraction.

CULTIVATION METHOD: according to the criteria of organic farming and the SOStain® protocol;
grassed soils with field beans, vetch and spontaneous flora to increase the organic matter and the nitrogen content, promoting the vitality of the soil microfauna; phytosanitary defense with sulfur and copper in minimal quantities; fight against pests with beneficial insects, sexual confusion and application of natural tonics such as zeolite, kaolin and plant extracts.

HARVEST PERIOD: Nero d'Avola, Cabernet Franc, Syrah 8-15 September; Merlot 30 August.

VINIFICATION: the grapes were harvested and transported to the cellar in small and medium-sized trolleys. Once in the cellar, they were destemmed and crushed, then sent to 114/160/213 hl steel tanks. The grapes were moved three times a day with very short pumping overs - between 12 and 25 minutes - depending on the phase of fermentation, in order to respect the skin and the fruit as much as possible.
Fermentation lasted 7/8 days, the temperature in the early stages was kept at around 16-17 °C and then, approaching its conclusion, the refrigeration was suspended and the last degrees of alcohol took place with temperatures between 24 -25°C. Once the fermentation was over, the skins were drawn off. The malolactic fermentation took place in the same tanks; once
completed, between November and December, after the racking following the malolactic fermentation, the refinement began, again in steel tanks.

ORGANOLEPTIC NOTES: Intense and vivid ruby red colour. On the nose aromas of currants and mulberry with a subtle spicy and mentholated finish. In the mouth the wine shows its beautiful personality with flavors of ripe berries, balanced by a full and herbaceous taste in an absolutely pleasant way. The tannins are docile and well smoothed thus giving this red a very versatile character

PAIRING: For daily consumption it is ideal in combination with Mediterranean first courses, light meat dishes, vegetables or even oily fish

AGING: stainless steel.
