Veal stew with potatoes - Sicilian Recipe

600 g of cubes of veal pulp
1 small carrot
1/2 stick of celery
1 small onion
400 g of potatoes
2 tablespoons of tomato paste
1 tablespoon of flour
1/2 small glass of dry white wine
hot beef broth
2 sprigs of rosemary
1 knob of butter
extra virgin olive oil

🧑‍🍳 Preparation:
To prepare the veal stew with potatoes, start with the sautéed vegetables. Peel the celery, carrot and onion. Finely chop them and let them dry in a pan together with a drizzle of extra virgin olive oil. At the same time, in a saucepan with a spoonful of oil and a knob of butter, brown the meat over high heat, stirring frequently without ever piercing it.
When the meat is evenly browned, add the sautéed vegetables and cook for a few minutes. Add salt and pepper and add the flour and mix to avoid the formation of lumps.
When the flour has been completely absorbed, pour in the white wine and let it evaporate over high heat. Cover flush with the hot meat broth and add the two sprigs of rosemary.
Dissolve two tablespoons of tomato concentrate in the cooking juices, stir and cover. Cook slowly continuing cooking for about 1 hour, turning from time to time. After this time, add the peeled and diced potatoes (more or less the same size as the meat). Cover with a lid and continue cooking for another 30 minutes or until the potatoes are soft without being too tender.
