🍅 Ingredients :
280 g butterflies
2 aubergines
10 cherry tomatoes
1 bunch of basil
100g black olives
1 shallot
extra virgin olive oil
salt
🧑‍🍳 Preparation :
Wash the aubergines and cut them into cubes.
Peel and chop the shallot, fry it in a pan with a drizzle of oil, add the aubergines and brown.
Wash the cherry tomatoes, cut them in half, add them to the aubergines, add the chopped basil, the olives, a pinch of salt and cook for five minutes.
Boil the farfalle in abundant boiling salted water, drain them and mix them with the sauce.
